Stuffed Peppers

Ingredients
  

  • 12 bell peppers (I use red, yellow, orange)
  • 2 lbs ground turkey
  • 1 29 oz tomato sauce
  • 1 15 oz can petite diced tomatoes
  • 2 cups brown rice
  • 1 onion chopped
  • 3 cloves garlic
  • 2 tsp oregano
  • 1 tsp red pepper flakes
  • Salt and Pepper to Taste
  • 2 lbs Green Beans

Instructions
 

  • Preheat oven to 350 degrees. Cut the tops off the peppers, clean out insides. Place in baking pans and bake 15 minutes while browning turkey.
  • In a large skillet brown ground turkey, chopped onions and garlic. Season with salt and pepper, oregeno and red pepper flakes. Once browned at tomato sauce and petite diced tomatoes.
  • In small sauce pan, make rice according to package directions. Add cooked rice to ground turkey mixture.
  • Add turkey and rice mixture to peppers. Bake 30 minutes.
  • Boil 4 cups water. Add green beans and cook 5 minutes. Drain and serve seasoned with salt and pepper.

Notes

Option to add shredded cheese to the top for the last 15 minutes of baking.
