Stuffed Peppers
Ingredients
- 12 bell peppers (I use red, yellow, orange)
- 2 lbs ground turkey
- 1 29 oz tomato sauce
- 1 15 oz can petite diced tomatoes
- 2 cups brown rice
- 1 onion chopped
- 3 cloves garlic
- 2 tsp oregano
- 1 tsp red pepper flakes
- Salt and Pepper to Taste
- 2 lbs Green Beans
Instructions
- Preheat oven to 350 degrees. Cut the tops off the peppers, clean out insides. Place in baking pans and bake 15 minutes while browning turkey.
- In a large skillet brown ground turkey, chopped onions and garlic. Season with salt and pepper, oregeno and red pepper flakes. Once browned at tomato sauce and petite diced tomatoes.
- In small sauce pan, make rice according to package directions. Add cooked rice to ground turkey mixture.
- Add turkey and rice mixture to peppers. Bake 30 minutes.
- Boil 4 cups water. Add green beans and cook 5 minutes. Drain and serve seasoned with salt and pepper.
Notes
Option to add shredded cheese to the top for the last 15 minutes of baking.
