Taco Salad

So this is my healthy meal prep version. Anything with fresh tomatoes and lettuce should be eaten first in the week. Let's be real here I have teenagers they eat this meal prep version adding lots of shredded cheddar cheese and Doritos. I usually make extra taco meat because they love making their own corn tortilla quesadillas with meat cheese and the tomato mix. Make the plans work for you!

Ingredients
  

  • 2 lbs ground turkey
  • 4 TBS taco seasoning
  • 1 cup water
  • 2 cans black beans drained and rinsed
  • 3 bell peppers chopped (yellow, red or orange)
  • 3 cups cilantro chopped
  • 1 jalepeno finely diced
  • 1 Bunch green onion chopped
  • 2 pack romaine lettuce
  • 3 cups grape tomatoes chopped
  • 4 avocados chopped
  • 4 limes
  • 1 cup olive oil
  • 1/2 cup water
  • 2 clove garlic
  • Salt and Pepper to Taste

Instructions
 

  • Brown ground turkey in large pan. Add taco seasoning and water and simmer 5 minutes.
  • In large bowl combine 2 cups cilantro, chopped green onions, chopped peppers, jalapeno and tomatoes. Tear Romaine Lettuce.
  • In Meal prep containers or large platter for presentation divide and arrange lettuce, vegetable mixture, beans and ground turkey.
  • Make dressing in Vitamix or blender. Add avocado, peeled garlic, cilantro, olive oil, lime juice and salt and pepper. Mix until smooth. Add water until desired consistency. (I always use a hand press juicer to get the most juice out of limes.
