Taco Salad
So this is my healthy meal prep version. Anything with fresh tomatoes and lettuce should be eaten first in the week. Let's be real here I have teenagers they eat this meal prep version adding lots of shredded cheddar cheese and Doritos. I usually make extra taco meat because they love making their own corn tortilla quesadillas with meat cheese and the tomato mix. Make the plans work for you!
Ingredients
- 2 lbs ground turkey
- 4 TBS taco seasoning
- 1 cup water
- 2 cans black beans drained and rinsed
- 3 bell peppers chopped (yellow, red or orange)
- 3 cups cilantro chopped
- 1 jalepeno finely diced
- 1 Bunch green onion chopped
- 2 pack romaine lettuce
- 3 cups grape tomatoes chopped
- 4 avocados chopped
- 4 limes
- 1 cup olive oil
- 1/2 cup water
- 2 clove garlic
- Salt and Pepper to Taste
Instructions
- Brown ground turkey in large pan. Add taco seasoning and water and simmer 5 minutes.
- In large bowl combine 2 cups cilantro, chopped green onions, chopped peppers, jalapeno and tomatoes. Tear Romaine Lettuce.
- In Meal prep containers or large platter for presentation divide and arrange lettuce, vegetable mixture, beans and ground turkey.
- Make dressing in Vitamix or blender. Add avocado, peeled garlic, cilantro, olive oil, lime juice and salt and pepper. Mix until smooth. Add water until desired consistency. (I always use a hand press juicer to get the most juice out of limes.
