Taco Salad
So this is my healthy meal prep version. Anything with fresh tomatoes and lettuce should be eaten first in the week. Let's be real here I have teenagers they eat this meal prep version adding lots of shredded cheddar cheese and Doritos. I usually make extra taco meat because they love making their own corn tortilla quesadillas with meat cheese and the tomato mix. Make the plans work for you!

- 2 lbs ground turkey
- 4 TBS taco seasoning
- 1 cup water
- 2 cans black beans drained and rinsed
- 3 bell peppers chopped (yellow, red or orange)
- 3 cups cilantro chopped
- 1 jalepeno finely diced
- 1 Bunch green onion chopped
- 2 pack romaine lettuce
- 3 cups grape tomatoes chopped
- 4 avocados chopped
- 4 limes
- 1 cup olive oil
- 1/2 cup water
- 2 clove garlic
- Salt and Pepper to Taste
Brown ground turkey in large pan. Add taco seasoning and water and simmer 5 minutes.
In large bowl combine 2 cups cilantro, chopped green onions, chopped peppers, jalapeno and tomatoes. Tear Romaine Lettuce.
In Meal prep containers or large platter for presentation divide and arrange lettuce, vegetable mixture, beans and ground turkey.
Make dressing in Vitamix or blender. Add avocado, peeled garlic, cilantro, olive oil, lime juice and salt and pepper. Mix until smooth. Add water until desired consistency. (I always use a hand press juicer to get the most juice out of limes.
