Breakfast Tacos
A great way to start the day with lots of flavor, protein and a little spice!
Ingredients
- 16 corn tortillas
- 1 lb turkey sausage
- 16 eggs
- 1 can black beans drained and rinsed
- 1 jalepeno
- 1 pint Grape Tomatoes quartered
- 1 bunch green onions chopped
- 1 large handful cilantro chopped
- 2 yellow bell peppers chopped
- Juice of 1 lime
- 2 tsp olive oil
- Salt and Pepper to Taste
- 2 Avacados
- Optional shredded cheese
Instructions
- Heat tortillas individually over medium high heat to give a little color.
- Remove sausage from casings. Brown, drain grease, and set aside.
- Whisk eggs in large bowl until blended well. Season with salt and pepper. Scramble in non-stick skillet, stirring with spatula until desired doneness.
- In a large bowl combine: tomatoes, peppers, jalepenos, onions, lime juice, olive oil, black beans and cilantro.
- For meal prep, add fresh avocados right before serving.
