Heat tortillas individually over medium high heat to give a little color.
Remove sausage from casings. Brown, drain grease, and set aside.
Whisk eggs in large bowl until blended well. Season with salt and pepper. Scramble in non-stick skillet, stirring with spatula until desired doneness.
In a large bowl combine: tomatoes, peppers, jalepenos, onions, lime juice, olive oil, black beans and cilantro.
For meal prep, add fresh avocados right before serving.
