Chicken Romaine Salad
Another meal prep basic. Make protein in advance and have on hand with your favorite greens. Add your favorite vinaigrette.
Ingredients
- 6 large chicken breasts
- 2 tbsp olive oil
- 2 tbsp Italian seasoning
- 2 tbsp Roasted Garlic and Herb Weber Seasoning
- 2 packs romaine hearts
- 1 pint grape tomatoes
- Salt and Pepper to Taste
- 1/4 cup chicken broth
- 4 cups baby kale
Instructions
- Preheat oven to 375. Place Chicken in 9x13 pan season with olive oil, Italian seasoning , roasted garlic and herb seasoning. Pour in chicken stock. Bake for 45 minutes. Remove cool and slice.
- Chop romaine lettuce. Mix with baby kale.
- For dressing use your favorite basic vinaigrette.
