Eat the Rainbow Bowl

Ingredients
  

  • 2 Chickpeas drained and rinsed
  • 3 sweet potatoes peeled and sliced into 1/2slices
  • 1 tbsp olive oil
  • Salt and pepper
  • 1 pint grape tomatoes
  • 4 cups baby kale
  • 1 English Cucumber thinly sliced
  • 1 cup quinoa cooked according to package directions
  • 1/2 red onion siracha
  • 2 tsp siracha
  • 2 tsp Garlic Powder

Instructions
 

  • Preheat oven to 400. Line a baking sheet with foil. Place chickpeas, top with salt, pepper, garlic powder and sriracha. Bake for 40 minutes
  • Place slices of sweet potatoes in single layer. Bake for 20 minutes or until cooked through. Let cool.
  • Layer the ingredients into bowls. Top with your favorite vinaigrette before serving.
