Eat the Rainbow Bowl
Ingredients
- 2 Chickpeas drained and rinsed
- 3 sweet potatoes peeled and sliced into 1/2slices
- 1 tbsp olive oil
- Salt and pepper
- 1 pint grape tomatoes
- 4 cups baby kale
- 1 English Cucumber thinly sliced
- 1 cup quinoa cooked according to package directions
- 1/2 red onion siracha
- 2 tsp siracha
- 2 tsp Garlic Powder
Instructions
- Preheat oven to 400. Line a baking sheet with foil. Place chickpeas, top with salt, pepper, garlic powder and sriracha. Bake for 40 minutes
- Place slices of sweet potatoes in single layer. Bake for 20 minutes or until cooked through. Let cool.
- Layer the ingredients into bowls. Top with your favorite vinaigrette before serving.
