Kale Salad with Cucumber Dressing
Ingredients
- 2 English Cucumbers
- 1 handful italian parsley
- 5 tbsp olive oil
- Salt and Pepper to Taste
- baby kale
- 8 oz Lima Beans
Instructions
- Preheat oven to 425. On large cookie sheet toss dried cooked lima beans in 1 tbsp olive oil and salt and pepper. Bake for 20 minutes or until they just start to turn brown.
- For dressing in a Vitamix, blend 1 English cucumber (chopped into chunks, handful of parsley, salt, pepper and 5 tbsp olive oil. (adjust amount of olive oil to desired consistency)
- For salad Toss baby kale, roasted lima beans sliced cucumbers and dressing. For meal prep add the dressing right before eating. For protein add salmon or chicken.
