Preheat oven to 425. On large cookie sheet toss dried cooked lima beans in 1 tbsp olive oil and salt and pepper. Bake for 20 minutes or until they just start to turn brown.
For dressing in a Vitamix, blend 1 English cucumber (chopped into chunks, handful of parsley, salt, pepper and 5 tbsp olive oil. (adjust amount of olive oil to desired consistency)
For salad Toss baby kale, roasted lima beans sliced cucumbers and dressing. For meal prep add the dressing right before eating. For protein add salmon or chicken.
