Cucumber Hummus

This is so yummy I could eat it with a spoon! Love the flavors and it takes less than 5 minutes to make! I kept it light so just used one can of chickpeas but you could keep everything else the same and add two for a more traditional hummus.

Ingredients
  

  • 1 English Cucumber cut into large chunks
  • 1 clove garlic pressed
  • 2 tbsp olive oil
  • 1 Can Chickpeas drained and rinsed
  • 1 handful parsley
  • 1 juice of 1 lemon
  • Salt and Pepper to Taste

Instructions
 

  • Add all the items to the Vitamix and blend away! Cucumber takes the place of water and adds oh so much flavor. Be sure to season with plenty of salt and pepper.
