Cucumber Hummus
This is so yummy I could eat it with a spoon! Love the flavors and it takes less than 5 minutes to make! I kept it light so just used one can of chickpeas but you could keep everything else the same and add two for a more traditional hummus.

- 1 English Cucumber cut into large chunks
- 1 clove garlic pressed
- 2 tbsp olive oil
- 1 Can Chickpeas drained and rinsed
- 1 handful parsley
- 1 juice of 1 lemon
- Salt and Pepper to Taste
