Hawaiian Meatballs

When fresh pineapple is on sale I love to stock up. This was one of the ways we used fresh pineapple this week.For a cleaner, simpler version I love the meatballs just on their own with fresh pineapples and peppers too!

Ingredients
  

  • 3 lbs ground turkey lean
  • 1 cup panko bread crumbs we use gluten free
  • 2 eggs
  • 1 bunch cilantro chopped
  • 1 onion finely chopped
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 jalepenos finely chopped
  • 4 cups beef stock
  • 1/4 cup soy sauce
  • 3 tbsp cornstarch
  • 4 bell peppers cut in large chunks
  • 1 fresh pineapple cut into chuncks
  • 3 cloves garlic pressed

Instructions
 

  • In a large bowl mix ground turkey, diced onion (I use food processor or chopper to get very finely chopped) , 1 jalapeno, cilantro, beaten eggs, salt and pepper. Mix well. Add panko and mix again.
  • Form into meatballs (I use a cookie baller), and cook in large pot over medium high heat. Brown on all sides and cook until just cooked through (about 10 minutes). Cook in batches.
  • Mix together in small bowl, broth, soy sauce, garlic, 1 chopped jalapeno, cornstarch, Add to pot and heat, stirring constantly until thickened. Add pineapple, meatballs and peppers. Heat about 5 minutes until flavors cooked through.
