Pumpkin Protein Muffins

Ingredients
  

  • 1 cup protein powder I used isagenix pumpkin protein powder
  • 1 cup gluten free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tbsp pumpkin spice
  • 1 15 oz can pumpkin puree
  • 2 eggs
  • 1/2 cup honey
  • 1/2 cup butter
  • 1/3 cup milk

Instructions
 

  • Preheat oven to 350.
  • Mix all ingredients together with hand mixer until well blended. I am not a baker. You should probably mix the wet ingredients first. You may substitute for butter (and a more healthy option )coconut oil and greek yogurt.
  • Place batter in greased muffin tins. Bake at 350 for 20-25 minutes or until cooked through (toothpick comes out clean)
