Pumpkin Protein Muffins
Ingredients
- 1 cup protein powder I used isagenix pumpkin protein powder
- 1 cup gluten free flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla
- 1 tbsp pumpkin spice
- 1 15 oz can pumpkin puree
- 2 eggs
- 1/2 cup honey
- 1/2 cup butter
- 1/3 cup milk
Instructions
- Preheat oven to 350.
- Mix all ingredients together with hand mixer until well blended. I am not a baker. You should probably mix the wet ingredients first. You may substitute for butter (and a more healthy option )coconut oil and greek yogurt.
- Place batter in greased muffin tins. Bake at 350 for 20-25 minutes or until cooked through (toothpick comes out clean)
