Spring Romaine Wedge

Ingredients
- 6 Hearts of Romaine Lettuce (cut in 1/2)
- 6 Eggs Hard Boiled
- 1 Cup of Pancetta (cut into pieces and cooked )
- 5 radishes (sliced)
- 1/2 of English Cucumber (chopped)
- 1 Pint of grape tomatoes (Halved)
- 1/3 Cup Jarred Pepperoncini Peppers
- 1 Cup of Sugar Snap Peas
- 1 Bunch of Green Onions Chopped
- 8 Oz of Plain Greek Yogurt
- 1/4 Cup of white wine vinegar
- 1/4 Cup of Olive Oil
- 1/4 Cup of Milk
- 1 Packet of Hidden Valley Ranch Dressing Mix
Instructions
- Arrange the lettuce and sprinkle on all the toppings.
- For the dressing combine the Plain Greek Yogurt, White Wine Vinegar, Olive oil, Milk and the hidden valley ranch dressing mix. Shake in a mason jar and refrigerate overnight.
