Quinoa Black Bean Salad
I love prepping portions of salads like this for snacks during the week. A perfectly sized healthy snack ready to go. I have many recipes with these flavors because I love them. Dips, salsas, salads, garnishes and more.
Ingredients
- 1 cup quinoa
- 3 cups black beans drained and rinsed
- 2 bell peppers red, yellow or orange, chopped
- 1 pint grape tomatoes quartered
- 1 bunch cilantro chopped
- 1 bunch green onions chopped
- 1 jalepeno finely chopped
- 1 lime
- 1 tbsp olive oil
Instructions
- Cook quinoa in water, chicken or vegetable broth according to directions. Set aside and let cool.
- If using canned beans, drain and rinse. Or prepare dried beans.
- Chop peppers, jalapeno, onions, cilantro, and tomatoes. Combine in large bowl with quinoa, beans, juice of one lime, olive oil salt and pepper and mix well.
