Quinoa Black Bean Salad
I love prepping portions of salads like this for snacks during the week. A perfectly sized healthy snack ready to go. I have many recipes with these flavors because I love them. Dips, salsas, salads, garnishes and more.

- 1 cup quinoa
- 3 cups black beans drained and rinsed
- 2 bell peppers red, yellow or orange, chopped
- 1 pint grape tomatoes quartered
- 1 bunch cilantro chopped
- 1 bunch green onions chopped
- 1 jalepeno finely chopped
- 1 lime
- 1 tbsp olive oil
Cook quinoa in water, chicken or vegetable broth according to directions. Set aside and let cool.
If using canned beans, drain and rinse. Or prepare dried beans.
Chop peppers, jalapeno, onions, cilantro, and tomatoes. Combine in large bowl with quinoa, beans, juice of one lime, olive oil salt and pepper and mix well.
