A great way to bring fall into hummus. This is great served with vegetables, pita chips or pretzels.

Butternut Squash Hummus

Ingredients
  

  • 1 Butternut Squash
  • 3 cans Chickpeas drained and rinsed
  • 1 cup water
  • 3 cloves garlic
  • 3 drops Young Living Lemon Vitality Essential Oil or Juice of lemon (used lemon juice for nutritional info)
  • 1/2 cup olive oil
  • Salt &Pepper to Taste

Instructions
 

  • Peel, seed and cut into cubes the butternut squash. Drizzle with olive oil, salt and pepper. Roast at 400 degrees for 30 minutes. Let cool.
  • Add butternut squash, chickpeas, 3/4 cup water, garlic, lemon, salt and pepper to Vitamix. Blend well. Drizzle in Olive Oil and continue blending. Add remaining water to desired consistency and adjust salt and pepper to taste.
  • Optional: Top with Olive oil and roasted butternut squash seeds.
