Instructions
Peel, seed and cut into cubes the butternut squash. Drizzle with olive oil, salt and pepper. Roast at 400 degrees for 30 minutes. Let cool.
Add butternut squash, chickpeas, 3/4 cup water, garlic, lemon, salt and pepper to Vitamix. Blend well. Drizzle in Olive Oil and continue blending. Add remaining water to desired consistency and adjust salt and pepper to taste.
Optional: Top with Olive oil and roasted butternut squash seeds.
