Southwest Salad

Protein, fiber and lots of great color and flavor.

Ingredients
  

  • 1 can black beans drained and rinsed
  • 3 cups grape tomatoes quartered
  • 1 bunch green onions chopped
  • 1 jalapeno finely chopped
  • 1 Yellow bell Pepper chopped
  • 2 limes
  • 1 large rotisserie chicken breasts shredded
  • Romaine lettuce
  • 1 TBS olive oil
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and Pepper to Taste

Instructions
 

  • Shred breasts of rotisserie chicken place in gallon zip lock bag. In a small bowl mix juice of 1 lime, olive oil, cumin, chili powder. Mix together. Place mixture over chicken in bag. Mix well. Set aside for 15 min.
  • In a separate bowl, mix tomatoes, onions, peppers, jalapeno, season with salt and pepper.
  • Tear Romaine lettuce or cut with a plastic knife. Portion out into containers. Add a portion of black beans, a portion of tomato mixture, a portion of chicken. Slice limes and place quarter in each. Squeeze with fresh lime right before eating.
  • Optional toppings. Taco sauce for dressing and tortilla strips.
