Shred breasts of rotisserie chicken place in gallon zip lock bag. In a small bowl mix juice of 1 lime, olive oil, cumin, chili powder. Mix together. Place mixture over chicken in bag. Mix well. Set aside for 15 min.
In a separate bowl, mix tomatoes, onions, peppers, jalapeno, season with salt and pepper.
Tear Romaine lettuce or cut with a plastic knife. Portion out into containers. Add a portion of black beans, a portion of tomato mixture, a portion of chicken. Slice limes and place quarter in each. Squeeze with fresh lime right before eating.
Optional toppings. Taco sauce for dressing and tortilla strips.
