Turkey Mushroom Stroganoff with Green Beans

Servings 8 small portions

Ingredients
  

  • 5 cups White Mushrooms Sliced
  • 2 lbs lean ground turkey
  • 2 large onion diced
  • 3 cloves garlic pressed
  • 2 cups beef broth
  • 2 tablespoons cornstarch
  • 2 teaspoons Worcestershire sauce
  • 2 cups No Fat Greek Yogurt (used regular Greek Yogurt for nutritional info)
  • 16 oz Green Beans
  • 2 packages linguine noodles gluten free (nutritional info may differ)
  • Salt and Pepper to Taste

Instructions
 

  • Begin 6 cups water boiling for noodles in large pot. In a separate pot bring 6 cups water to boil for green beans. Brown ground turkey over medium high heat. Season turkey with salt and pepper. Drain any excess fat. In a separate pan, saute onions, garlic and mushrooms, when soft add turkey. Mix together beef broth, corn starch and Worcestershire sauce then add to onion, mushroom turkey mixture. Bring to a boil then reduce heat and simmer until it thickens, then add greek yogurt. Once water is boiling, add noodles and cook following package instructions. In the other pot of water add green beans, cook until slightly tender( about 5 minutes) . Drain both noodles and beans. For meal prep divide the noodles between dishes, then top with divided portions of turkey mixture. Divide green beans into portions.

Notes

Modifications Ground beef, chuck, or sirloin for ground turkey, Sour Cream for Greek Yogurt, Green Beans when on sale I buy the fresh packages that you can steam in the microwave. Saves time cleaning. Instead of making your own seasoning use 2 Packets of McCormick Seasoning Packets for the Beef Stroganoff. Use butter or olive oil to saute onions and to top the green beans. For noodles, substitute egg noodles if not gluten-free, or spaghetti squash for low carb.
