Chipotle Pulled Beef

Ingredients
- 2 lbs Beef Roast
- 1 1 large onion diced
- 6 cloves garlic minced
- 4 dried Chipotle peppers
- 1 Jalapeno peppers
- 1 cups Tomato puree reduced
- 1/4 cup Bone beef broth
- 2 tsp cumin
- 2 tsp Chili
- 1 tsp paprika
- 1 tsp salt
- 1 tsp Ground pepper
- 2 tbsp olive oil
- 2 cups black beans soaked, rinsed, cooked
- 1 Yellow bell Pepper diced
- 1 Green bell Pepper diced
- 1 orange bell pepper diced
- 1 Red bell Pepper diced
- 2 Jalapeno peppers diced
- 1 bunch cilantro diced
- 1 bunch green onion chopped
- 2 cups grape tomatoes diced
- 2 Lemons juice
Instructions
- Mix together the cumin, chili powder, paprika, salt, and pepper. Quarter the roast and roll in spices. Heat oil pan and brown the roast on all sides.
- Transfer to a crockpot with onion, garlic, chipotle peppers, jalapenos, tomato puree, and beef broth.
- Cook on low for 8 hours.
- Mix the black beans, bell peppers, cilantro, green onions, jalapenos, lime juice, tomatoes, and salt.
- When the Roast is done shred in the juices with a fork, and serve with the bean salsa and guacamole.
- For meal prep divide between containers.
