This Peanut Noodle salad

If you are down for a tasty meal you cant go wrong with this recipe!
Servings 6

Ingredients
  

  • 3 packages Of Miracle Noodles (shirataki)
  • 2 red bell peppers ( julienned )
  • 1 package of Shredded carrots
  • 1 bunch of green onion (chopped)
  • 1 bunch of Cilantro (chopped)
  • 1.5 lbs of Chicken thighs
  • 1/3 cup of soy sauce
  • 1 tbsp of Sesame oil
  • 2 tbsp of Natural Peanut Butter
  • 6 Cloves Garlic
  • 2 tsp of Minced Ginger
  • 2 tsp of Sriracha
  • 1/4 cup of Rice Wine Vinegar
  • juice of one lime

Instructions
 

  • Begin by seasoning the chicken with salt and pepper and bake chicken thighs at 350 for 45 min .When done, cool and chop.
  • Combine all sauce ingredients (Soy sauce, Sesame oil, Natural peanut butter, Cloves garlic, Minced ginger, Sriracha, Rice wine vinegar and Lime) in a mason jar.
  • Shake the sauce well and put over Noodles, Chicken and Vegetables.
  • Enjoy!
