Beet and Cottage Cheese Salad
One of my favorite snacks.
Its full of color, flavor and healthy too!
- 1 Red Beets
- 2 cups of arugula
- half cup of low-fat cottage cheese
Cut and slice the beet into thin slices
Toss the arugula in a bowl and arrange the beets on top
Pour the cottage cheese on the side.
Enjoy!
