Beet and Cottage Cheese Salad

One of my favorite snacks. Its full of color, flavor and healthy too!
Servings 1

Ingredients
  

  • 1 Red Beets
  • 2 cups of arugula
  • half cup of low-fat cottage cheese

Instructions
 

  • Cut and slice the beet into thin slices
  • Toss the arugula in a bowl and arrange the beets on top
  • Pour the cottage cheese on the side.
  • Enjoy!
